All four wines and caviars are presented together, so you can go at your pace or follow along with the host.

Our first pairing was the No.8 Brut, Crémant de Bourgogne from 2012 and the Classic Caviar. The Classic Caviar is domestic Sturgeon that varies in size and color and is the perfect introduction to caviar. The buttery and nutty flavor of the caviar pairs beautifully with the soft honey notes of the No. 8. The No. 8 enhances the natural flavors of the caviar without being too overpowering.

Next up is the No. 34 Brut Rosé 2018 paired with the Royal Caviar. I love a good sparkling rosé, and the No. 34 lives up to my expectations. Coming from Carneros, the most southern tip of the Napa Valley, the No. 34 is the perfect light pink color with hints of red berries, strawberries, and just the right amount of tartness. White sturgeon Royal Caviar is known as the “other black gold.” The eggs are a mix of amber and grey, which gives the caviar a rainbow glow. The creaminess of the Royal Caviar enhances the subtle flavors of the No. 34 in the most delightful way

Our last two sparkling wines are Champagnes from France! A rare treat in Napa Valley. First up is the La Victoire Brut Champagne, produced for Beuna Vista Winery. The La Victoire Brut is 70% Pinot Noir, from Premier Cru vineyards from the Montagne de Reims, and 30% Chardonnay, mostly from Grand Cru Mesnil sur Oger and Chouilly, and aged for three years.  This champagne starts with elegant aromas of grapefruit, followed by rich honey and brioche notes. You experience white stone fruits, peaches, and pears flavors with the first taste. The La Victoire Brut is paired with the Supreme Caviar. The Supreme Caviar is the top grade of white sturgeon caviar. This caviar is hand-selected with a burst of flavor that is rich and nutty. The caviar plays off the complex flavors of the La Victoire, transporting you to a French countryside villa. 

Our last bubble and caviar pairing is the La Victoire Brut Rosé Champagne and the Hybrid Caviar. The creme de la creme of caviar, the Hybrid caviar, was by far my favorite of the four. The color is rich, and the flavor bursts in your mouth with each bite. La Victoire Brut Rosé Champagne was also my favorite bubble of the afternoon. Soft and creamy with hints of raspberry, the Champagne was the perfect way to end the tasting.
