Madeleine’s Macarons owes its genesis to a simple Valentine’s gesture. Macarons have long been Aubrey’s favorite, albeit infrequently enjoyed, baked treats. As Valentine’s Day approached, Dennis delved into the process of recreating these tiny confections of almond flour and meringue. They consist of only a handful of ingredients. How difficult could it be? How wrong he was, to assume this was going to be easy. His first Google result for “easy macaron recipe” returned nothing but despair and trepidation. Listed among the necessary “Special Equipment”: dehumidifier!! Well…miraculously, his first effort, although not quite polished enough for the fine Parisian Patisseries, produced some pretty good macarons. Or at least…and more importantly, the macarons and the sentiment and effort behind them, were warmly received and appreciated. He was hooked. The challenge of perfecting macarons has consumed him ever since. With the “stay at home” orders instated, the whole McIninch family, including their 2-year old, Madeleine “Maddie,” jumped in with both feet. After many hours spent baking into the night, the macarons began to look smoother, taste softer, and “crunch” more perfectly. Aubrey declared “If you keep baking these, I will sell them!”
Only five months after that first batch, the McIninch’s applied for their LLC. And little did they know how perfectly suited to running a business together they would be. Dennis organizes a kitchen, fulfills orders, and tirelessly perfects the recipes and methods. Aubrey handles the business side and works out all the details from packaging and permits, to flavor combinations and promotions.
Together- Dennis, Aubrey, Maddie, and their new addition, Ruby- hope to create something truly exceptional! This tireless family endeavor has truly become a passion.
